I converted this bus two years ago during my senior year of college and have been living in it fully off-grid (no hookups) since then. My panels and batteries have been plenty to power the lights, refrigerator, microwave, tv, and the mini-split, which is capable of both heating and cooling. You won't be able to run the mini-split 24x7 off the grid, but there is plenty of power available for a few hours a day. In the winter, supplemental heat is provided by a propane furnace built into the couch that runs on a separate thermostat. A power transitioning switch allows quick transition between battery power and hookup power. Water tanks are inside the bus instead of below, this preventing them from freezing. There is fiberglass insulation in the walls and ceiling, and polystyrene board below the floor. There is currently no greywater holding tank below the bus, as I'm living on a farm where I can drain onto the land, provided I use responsible soaps and detergents. One could be fairly easily strapped to the bus frame if desired.

I'm currently building a somewhat larger tiny house on the bed of a 24' flatbed truck and will be moving in soon, thus the need to sell my beloved bus. Contact me if you have any questions!
